Salami "come una volta"
From the pork butchering tradition that originated in the peasant world, the salami produced with all the cuts of the pig is back: just like in the old days, when, in season, expert pork butchers would rotate to the farms in the Piedmontese countryside to perform that rite - now almost extinct - of slaughtering the pig raised year-round in the yard. The pigs reserved for the production of "I Porci Comodi," a premium line under the Brizio brand, come exclusively from the family's farms nestled in the green valleys of Cuneo.
Free to move and breathe
Unlike pigs raised in fixed housing, which have no open space and are often forced to breathe in the miasmas that develop inside the barn, here the pigs live outdoors, thus benefiting from pure air and grazing among patches of vegetation, sunny meadows and undergrowth.
Precisely because they are free to move "comfortably" (hence the name), they also give mature, firm meat with a lower moisture content.
A diet according to nature
Just as in the past, pigs raised open-air, moving freely within the bush, feed on what nature and the undergrowth offer them spontaneously (acorns, chestnuts, roots, grass...). However, to ensure full animal welfare and ensure the right nutritional intake, the diet is supplemented with vegetable feed certified
UNI ISO EN 22005/08, DTP030 "no GMOs," DTP042 "no animal fats."
